National Pumpkin Day

Hello! How have ya'll been? Ready for more yummy treats and everything sweet? You may have noticed the name change. I'm not going to lie, I was stressing out with the "Saturday" thing I just couldn't commit. I feel this will work out better, now I have the option to post multiple times a week. How sweet is that?!

OK now on to more important things. It's National Pumpkin Day!

Try out these little delicious gems...how cute is that card I framed from my mom in the background?! She finds the best cards!

Mini Pumpkin Cheesecakes


I baked them in cupcake liners in a cupcake pan. I removed the liners for the photo.

Preheat oven 350.

Crust:
11/2 cups gram cracker crumbs
1 stick melted butter
1 Tbsp sugar

Press into bottom of cupcake liners and bake for 10 minutes. Turn the oven down to 325.

Filling:
1 8oz package of cream cheese (room temperature)
1/4 cup granulated sugar
2 Tbsp sour cream
1 egg
1/2 tsp of vanilla extract
1/2 Tbsp all purpose flour
1/4 tsp of salt
1/2 cup pumpkin puree

In a mixer beat the cream cheese and sugar until it is light and fluffy. Gradually add in all other ingredients and mix until well combined.

Evenly disperse into cupcake liners and bake for 35 minutes at 325 or until knife inserted comes out clean.

I love how they are bites size and delicious.
