Bursting Blueberry Crisp

Hello there! I know I know, where have I been?! I guess you can say I have been pretty busy. It just seems like the days and months are flying by. I let other things get in the way of my blogging and I haven't been as focused...but I think the fog is clearing in my head and it's time to share some sweet treats and inspiration again. So how a about it? Let's get started!

Aren't you all looooving the fresh fruit right now? I sure am. One of my favorites right now is blueberries. I bought a giant carton at the store, first time I have ever done that. It just seems like we go through the pint size way to quick in our house.

We don't really have dessert after dinner much, I know surprising seeing how I love to bake. Though on occasion I do like to add that special touch to a home cooked meal. So tonight I made my own version of blueberry crisp.

Ingredients:
2 cups of blueberries (I used fresh)
juice of 1/2 a lemon
1 1/2 cups rolled oats
1/4 cup butter (melted)
2 Tbsp 100% maple syrup
1 tsp cinnamon
pinch of nutmeg
pinch of salt

Place the blueberries in a mixing bowl and toss with the lemon juice. Then pour them into the bottom of a baking dish of your choice. Nothing to big, you want the blueberries to be in an even layer.

Isn't that just the cutest baking dish?! My favorite color of course. It was Brian's Grandma's. I wonder what she used to bake in it? Maybe a blueberry crisp :)

Using the same mixing bowl add the rest of the ingredients and mix well.

Once you have it all combined, spread the oats mixture over the blueberries.

Then bake at 350 uncovered for 30-35 minutes. Try not to burn the roof of your mouth devouring this one.
OMG Sooo yummy! The blueberries just burst with flavor! I wanted to lick the plate so bad. Maybe I did, maybe I didn't...you will never know ;)
