Thin Mint Cupcakes

Happy Sweet Tooth Saturday!!!

Do you guys know what time of year it is? It's that time of year where you are visited by a girl dressed in brown, green or blue...give up?

It's GIRL SCOUT COOKIE TIME!!! he he he.

Yes I was visited by a Girl Scout parent...there is such high demand, they have to help sell too :)

My favorite are the thin mints. So today I am sharing an amp'd up version of a thin  mint.

Thin Mint Cupcakes

First off you will have to purchase a box of thin mints. Don't worry if you can't find your local Girl Scout you can use the grasshopper cookies from the grocery store.

The first step is to crush the thin mints. Now I only had one sleeve of thin mints left...yes I ate a whole sleeve in one sitting...are you judging??? They are amazing and they only come once a year. At least that is what I told myself as I was consuming them.
Once you crush the cookies in a ziplock bag, pour into a mixing bowl with melted butter and stir.

Next spoon into the bottom of your cupcake liners and bake for 8 mins at 350 degrees.

Let cool and spoon in your chocolate cake and bake. Once cooled take an apple corer and take out the center of the cupcakes.


Fill the center with mint buttercream and level off with a thin layer.


For the next step dip the cupcake in mint flavored chocolate ganache. 

For the final step...eat and indulge!!!

Delicious!!! Did I mention I love this time of year?! :)

Mail from Grandma ~ Fudgy Chocolate Cherry Layer Cake

Hi Everyone! Guess what today's post is....

Mail from Grandma

Today is a good one. Fudgy Chocolate - Cherry Layer Cake. Grandma thought it would be great for Presidents Day, with George Washington and his cherry tree. I couldn't agree more!

Ingredients
1 package Devil's Food Cake Mix
1 can - 21oz Cherry Pie Filling
Eggs - use amount indicated on cake mix

Frosting
1 can - 21oz Cherry Pie Filling
1/2 cup powdered sugar
1 carton cool whip - thawed

Preheat oven to 350 degrees. 

Grease and flour two 9" cake pans.

With electric mixer beat cake mix, cherry pie filling and eggs.


Fill pans evenly.


Bake for 25-30 mins.
While the cakes are baking make your frosting...which totally reminds me of this cherry fluff stuff the grocery store deli had when I was a kid. Yum!!! Yes i licked the bowl...

Mix together the cherry pie filling, cool whip and powdered sugar.
 OH..in case you missed it in the last picture...
Yes my nails are blue like my mixer :) 

Once the cakes have cooled, frost away!
 And adorn with Presidents Day decor. 

Refrigerate and enjoy!

I will eat the rest of this whole cake...no sharing here! So yummy. I loooove cherry pie filling!

Sweet Surprise

Hi Everyone! Today's post has a little twist to it. It is not edible but is still cute and sweet.

I am actually in St. Louis and I surprised my good friend from college. She is 6 months pregnant and my other good friend from college asked if I wanted to join her to visit for a girls weekend.

Surprise! Here I am and I come bearing sweet gifts.

Whoopie Pies

Today I am sharing a Duncan Hines recipe I tried. Mmmm they are so delicious and cute for Valentines Day.

Red Velvet Whoopie Pies

I used red velvet cake instead.
Mix all the ingredients together and then spoon onto a parchment lined baking sheet and bake. 
Make your Marshmallow Cream filling and sandwich together.
I decided to spruce mine up a bit for the up coming holiday. I cut a heart out of paper and used it as a stencil and dusted the cookies with powdered sugar.
I will try to make them a little smaller next time. All in all it was a great first time and they taste sooo yummy!!!
