Mini Neapolitan Cakes

Hello, looks like another Sweet Tooth Tuesday(life just got in my way again)... Today is my friend Makenzie's Birthday and yesterday we brought in treats to work for her.

Do you ever have left over batter or other ingredients and wonder what to do with them? It would be such a shame to throw out all those delicious ingredients. Well, I had some left over cake batter from a previous order and thought I would create something fun with it.

 
Mini Neapolitan Cakes
Ingredients:
leftover cake batter
leftover frosting
candy coated chocolate balls
 
Chocolate Ganache:
12oz chocolate chips
1 cup heavy whipping cream
 
*Bring cream to a boil and pour over chocolate chips and stir until smooth. Let cool at room temperature.
 
 
First bake your leftover batter in a thin layer. I had chocolate, strawberry and white cake batter left. I used parchment paper to easily remove the cakes. I baked them at 350 for 12-15 minutes.
Once cooled use a small circle cookie cutter to cut out your layers.

Use your leftover frosting to stack the layers. Just a thin layer of frosting.
Pour the chocolate ganache over the cakes to cover. I took my knife and swiped up the sides in small sections to give it some detail.
Adorn with a frosting star and a candy coated chocolate or what ever your heart desires. :)

Healthy Cookies

Hi Everyone!
Just so you know the subject line is not a joke. I am so excited to share this recipe with you today.  We all would like for baked goods to be healthy from now and then right? So we don't feel as guilty eating them. Well these cookies couldn't get any better. Plus they are so simple.

Ingredients:

2 Bananas
1 cup of quick oats
*additions of your choice

~This will make 12 cookies.

Mash the bananas, mix in the oats. Then add what ever additions you want. I split the "batter" and added chocolate chips to half and a little cinnamon and raisins to the other half.  No flour or sugar. See I told you they were healthy :).





Bake at 350 for 15 mins.

Done! That's it. They are soooo good and pretty good for you too. The options are endless for additions. I may try to add a little peanut butter with the chocolate chips next time. mmmm yum yum yum.

Mint & Chocolate Cake Cookies

Happy Sweet Tooth Saturday Everyone!

I have been having a sweet tooth craving for something chocolate and mint. For some reason it sounded so good to me. Probably because it is girl scout cookie ordering time and someone at work has a picture up of the cookies with a sign that says now taking orders. So I pass that sign everyday and stare at my favorite thin mint cookies, drooling and whipping the droll... Yes I think I have found the root cause of my craving.

So I was perusing my baking supplies and saw a box of chocolate cake mix and a bag of Andes mint chips and thought ohhhh this will be delicious and satisfy my craving of course.

This recipe is so simple. I love it!

Ingredients:
1 box of devils food cake
2 eggs
1/2 cup of vegetable oil
Andes mint chips

Preheat your oven to 375. Mix together cake mix, eggs and oil. Then stir in your mint chips.

I used a Tbsp to scoop out my dough.

Place on a cookie sheet and bake for 8-10 minutes. Look at my brand spanking new cookie sheets...Thanks Grandma ;)


Cool and enjoy! Mmmmm my craving is definitely satisfied, love when that happens. They honestly do taste like thin mints. Different texture of course.

I dipped the edges in green icing. I just mixed together powdered sugar, milk and green food coloring. You just eyeball it. I could have made mine a little thicker so the icing didn't run off...next time :)
