Mint & Chocolate Cake Cookies

Happy Sweet Tooth Saturday Everyone!

I have been having a sweet tooth craving for something chocolate and mint. For some reason it sounded so good to me. Probably because it is girl scout cookie ordering time and someone at work has a picture up of the cookies with a sign that says now taking orders. So I pass that sign everyday and stare at my favorite thin mint cookies, drooling and whipping the droll... Yes I think I have found the root cause of my craving.

So I was perusing my baking supplies and saw a box of chocolate cake mix and a bag of Andes mint chips and thought ohhhh this will be delicious and satisfy my craving of course.

This recipe is so simple. I love it!

Ingredients:
1 box of devils food cake
2 eggs
1/2 cup of vegetable oil
Andes mint chips

Preheat your oven to 375. Mix together cake mix, eggs and oil. Then stir in your mint chips.

I used a Tbsp to scoop out my dough.

Place on a cookie sheet and bake for 8-10 minutes. Look at my brand spanking new cookie sheets...Thanks Grandma ;)


Cool and enjoy! Mmmmm my craving is definitely satisfied, love when that happens. They honestly do taste like thin mints. Different texture of course.

I dipped the edges in green icing. I just mixed together powdered sugar, milk and green food coloring. You just eyeball it. I could have made mine a little thicker so the icing didn't run off...next time :)
