Mail from Grandma ~ Hummingbird Bundt Cake

Today is...

Mail from Grandma
My Grandma is so clever. She sent me a recipe for a hummingbird bundt cake. She said the hummingbirds start to migrate north in April and people who have hummingbird feeders are supposed to put them out in mid April. So why not celebrate this occasion with a cake in the hummingbirds honor :)

This is something I am going to make this week and possibly take into work for everyone to eat. I wanted to share the delicious sounding recipe with you today, in case you would like to do the same :)

Cracker Jack

"Take me out to the ball game take me out to the crowd. Buy me some peanuts and CRACKER JACKS"!

Today we are in West Virginia watching my cousins baseball game and I brought along Homemade Cracker Jack :)

Here's how I made it.

Ingredients:

1/2 cup popcorn kernels
1/2 cup peanuts
4 tsp olive oil
4 Tbs unsalted butter
1/2 cup corn syrup
1/2 cup brown sugar
1 Tbs molasses
1/2 tsp salt

Brown paper bags
Tape

Add kernels and olive oil to brown bag and tape shut.
Pop in microwave for 2-3 minutes.
Add in peanuts.
In a sauce pan melt the butter, brown sugar, corn syrup, molasses and salt.
Add to popcorn and stir to combined.
Spread on a cookie sheet and bake for 10-12 minutes at 350 degrees. Stirring a few times while baking.
Let air dry and stir frequently.

Bag up for the big game. Go Crusaders!!!

Chocolate Souffles

Wooo Hooo! It's a Sweet Tooth Saturday :). OK I am a little excited today. I have been dying to use these little cuties.

Aren't they adorable? I stumbled across these ramekins at World Market, when I was taking my grand ole' time roaming up and down every single isle making sure I didn't miss a thing! Yes if you can't tell I am a big fan of the store. I have even debated quitting my current job so I could work there and play house all day. Hey a girl can dream right?

OK let's get started...

Chocolate Souffles
Ingredients:
1/3 cup granulated sugar. Plus 2Tbs for dusting
5oz. bittersweet chocolate
3 egg yolks, room temp.
6 egg whites, room temp
butter
powdered sugar

First preheat your oven to 375. Butter the ramekins and sprinkle with sugar. Then get your eggs out and separated so they can come to room temp. 

Next melt your chocolate.

Remove your the chocolate from the heat and stir in the egg yolks. 

Then beat the egg whites until soft glossy peaks form.

Gradually add in the 1/3 cup of sugar and mix until stiff peaks form.

Add 1/3 of the egg whites into the chocolate mixture. Mix in the rest until it is all combined.

Spoon into your ramekins and bake for 12-15 mins.

YAY! it worked :) 

Seeing as this was my first time making these, does anyone know if they are supposed to stay puffed up or do they fall a little? Mine did fall but I think they were still a success. Very airy and delicious!

Turtles

Hello! What a busy busy baking week it has been but sweet no doubt. Today I am going to share the turtles I made for a wedding. These little cuties will be in the hotel favor bags for the out of town guests. The bride and groom love turtles.

Ingredients:
Chocolate
Caramel
Pecans

I used a turtle mold because when I said the bride and groom love turtles its actually the cute little critters :). I first filled the molds with a little dab of chocolate and placed in the freezer.

Next I dipped a pecan on caramel and placed in the mold and topped of with more chocolate. Then back in the freezer.
Then viola! Chocolate Turtles.
I made a partner for the dark chocolate ones...

Very bride and groom like :)
