Mail from Grandma ~ Red Velvet Brownies

Hi everyone! Sorry I did not post this past Saturday. Our house was so sick last week. We had a lot of resting to do. It was a pretty scene; do you all know the movie Willy Wonka? You know how all of Charlie's grandparents lay in the same bed day and night? Well we call this "Wonkafied" Lets just say we were very Wonkafied this past Saturday...

So now that I have sprung up out of bed, how about a Sweet Tooth Tuesday? I think it rolls off the tongue just as nice as Sweet Tooth Saturday...And we have Mail from Grandma!

Red Velvet Brownies
Valentines Day is close approaching, what better to surprise your sweetie with than Red Velvet Brownies?
 
Ingredients:
 
1 4oz. bitter sweet chocolate baking bar, chopped
1/4 cup of butter
2 cups of sugar
4 eggs
1 1/2 cups flour
1 1oz. bottle red liquid food coloring
1 1/2 tsp baking powder
1 tsp vanilla extract
1/8 tsp salt
 
Preheat oven to 350 degrees. Line bottom and sides of a 9 inch pan with foil and lightly grease.
Microwave the chocolate and butter until melted, about 1 ½ to 2 minutes.
Wisk in sugar and add eggs 1 at a time.
Gently stir in flour and next four ingredients.
Pour into prepared pan and bake for 44 to 48 minutes.
Let cool in pan on a wire rack for two hours. Removed the brownies from the pan using the foil as handles.
Decorate and serve as desired. I used my heart shaped cookie cutters and dusted the hearts with powdered sugar.

Homemade Fondant

Hello Sweet Toothers! So I hope this post is not too confusing. A few people have asked how I make my fondant. So here we go...

The stars of the show: (what a show it will be, bring a little patience)
1 2lb bag of powdered sugar
1 bag of mini marshmallows
a BIG bowl
1-2 tsp water
You will also need Crisco and a hard spatula or mixing spoon. These will come in handy in a bit.

First dump the marshmallows in a microwavable bowl. Sprinkle with the water and microwave in 30 second increments, stirring in between. Takes about 90-120 seconds.


Next sprinkle some powdered sugar into the bottom of your BIG bowl then pour the melted marshmallow on top.

The first time I did this I did it on my counter top...yes, go ahead and ponder that vision...Use a bowl!!! :)

Use your hard spatula and start scraping the powdered sugar into the marshmallow. This takes patience. Keep adding in your powdered sugar and keep mixing. It will begin to take shape...

Once it is starting to harden up (not a sticky mess) grease your hands with Crisco and start to kneed. If it starts to stick to your hands just re-grease. Keep working in the powdered sugar until you get a play dough consistency.

Your fondant is now ready to be colored and shaped into your fun master piece. I know this takes a little time. The more you practice the easier it gets and it is very worth it. I love making fondant and I am not a fan of the store bought variety. It is too hard for my liking and not as pliable as this homemade version. It's a lot cheaper too ;).

Just a few extra tips: When you roll it out, dust the surface with powdered sugar. You can also flavor your fondant with a little vanilla or almond extract for those who like to eat it. To tint just use food coloring and grease your hands again and kneed away.

Cookie for One

Hello! Oh look it's Sunday again...I had a baby shower cake to do yesterday so I was kind of preoccupied.

So today's post is dedicated to my sister in-law Sarah. Here's a little back story...One day I was typing my blog and Mr. Mr. came into the kitchen and was like, "Jen, can you make me like a cookie or something"? Of course I was like yea sure, then I actually focused on his request and was like WHAT?! Just whip you out a cookie? I'm impressed he thinks my skills are that good but making cookies takes time. I told Sarah this story and she just loved it and now always says "Can you make me like a cookie or something"?...

Well here you go Sarah, a cookie for one! :)

The Ingredients:
  • 1 Tbsp Butter
  • 1 Tbsp White Sugar
  • 1 Tbsp Brown Sugar
  • 1/4 tsp of Vanilla Extract
  • Small Pinch of Salt
  • 1 Egg Yolk
  • 1/4 cup All Purpose Flour
  • 2 Tbsp Chocolate Chips
The Stars of the Show:


  1. Start by melting your butter in your mug in the microwave.
  2. Add sugars, vanilla and salt. Mix well.
  3. Add in the yolk only and stir.
  4. Add flour and stir to combined.
  5. Mix in the chocolate chips, your concoction will look like cookie dough.
  6. Place in microwave 40-60 seconds, start checking for at 40 seconds. Do not cook longer than a minute.
  7. Enjoy warm

A Dinorrrific Party

Sorry guys, I tried to post this from my phone yesterday but I couldn't figure out how to upload pictures. It was mildly frustrating, so I went to bed :). 

Yesterday we celebrated Mr. Mr.'s 7th birthday and it was a dinorrrific time. Can you guess the theme? Someone is into dinosaurs. So I made a cake and a fun dino dig dessert. I took chocolate pudding and mixed in dinosaur gummy treats and topped it off with crushed oreos. Everyone was an archeologists for the day with that dessert haha. Mmmm.
