Sugar Cookies

Today we are kicking off the 1st of Santa's 6 Sweet Saturdays before Christmas. With Santa's favorite sweet of all, sugar cookie cut outs.

Ingredients:
1lb of unsalted butter, softened
1 cup granulated sugar
2 extra large eggs
1 Tbs. pure vanilla extract
6 cps all-purposed flour
1 tsp. baking soda
1 tsp. salt

Combine the butter, sugar, eggs and vanilla. Beat until light and fluffy. (I halved the recipe).

Whisk together dry ingredients and stir into butter mixture until just blended. Divide dough into thirds, pat each portion into a flat disk and wrap well with plastic wrap. Refrigerate for at least and hour and up to 24 hours.

Roll out dough on a lightly floured surface. Use cut outs of your choice. Place on parchment lned baking sheets. Bake at 375 for 5-7 mins.

Cool on rack and ice.

I used powdered sugar and milk for the icing. About a 1/2 cup of powdered sugar and 1-2 Tbs of milk.
